This recipe is sure to become a healthy favorite. It is not only very healthy it is also very versatile. Try as a dip with vegges and crackers or thin out with a bit more oil for a lovely pasta sauce. You are sure to love this umami rich recipe.

Ingredients

  • 1 pound of fresh mushrooms such as: Crimini, Shiitake and Oyster. If Lions Mane mushrooms are available I would highly suggest adding.

  • 1 cup of walnuts

  • 1-2 shallots

  • 5 garlic gloves

  • 2 inch piece of peeled and chopped ginger

  • 2 inch piece of Turmeric ( you can sub for dry if needed)

  • Juice of one lemon

  • Grape seed oil for blending and sautéing

  • Fresh herbs of your choice ( basil, chives and oregano are good options)

  • Salt and peper to taste

Directions

  1. Saute shallots and mushrooms in oil and season with salt and pepper.

  2. Once they have soften add garlic, ginger and turmeric. Cook til soft.

  3. Add walnuts and cook for few minutes.

  4. Add mixture to blender or food processor.

  5. Add lemon and herbs.

  6. blend and add a steady stream of oil til consistency you like is achieved. Season with salt and pepper.

  7. Serve with crackers or pastas. Stores up to a week in fridge.
